We were treated to paos made of chicken and beef cutlets from a local vendor later that evening. On his way home from work, the husband of our friend purchased these. The cutlet pao is pretty straightforward: a whole wheat bun stuffed with a chicken or beef cutlet and served with either Indian or continental gravies, only in Goa.
It is said that one of the main reasons KFC took so long to enter the state market was because of these delicious street foods. Our friends say that the locals never really liked KFC because they already had a better option.
